Garlic is abundant in fructosan (up to 75%) which is due to their diuretic action.
Essential oil (0.2-0.3%) produces a peripheral vasodilator effect, antihypertensive, hypolipemiant (inhibits the synthesis of cholesterol and triglycerides). This oil is constituted by garlicina, alliin or alilcistein sulfoxide (1%) which is hydrolyzed to produce allicin by the alliinase (responsible for the characteristic smell of garlic), which is rapidly converted into allyl disulfide.
The garlic also includes small amounts of vitamins (A, B1, B2, B6, C and E), adenosine and minerals (iron, silicon, sulfur, iodine, chromium, selenium). It also contains mucilage.
The main action of garlic is due to alliin.
